			<content:encoded><![CDATA[<p>The cost of flour tortillas has become amazingly expensive!  Not too long ago, you could buy a <em>dozen</em> pack for a dollar but nowadays the package contains 8 or 10 and costs almost three bucks!  Are the producers lacing these with flakes of gold?</p>
<p>For example, at the writing of this post, ShopRite has an eight count package, which weighs 20 ounces and costs $2.79.</p>

<p><strong>COST COMPARISON &#8211; BUY OR MAKE YOURSELF?</strong></p>
<p>At this price, you&#8217;re paying 35 cents per tortilla.  That doesn&#8217;t seem too bad, right?  But wait&#8230; in contrast, if you happen to bake a lot, and buy Walmart&#8217;s Great Value all purpose flour by the 25 pound bag, for five cents more you could make 14 tortillas. Let me say that again:</p>
<p><strong>For the cost of <span style="text-decoration: underline;">ONE</span> commercially produced tortilla, you could make <span style="text-decoration: underline;">FOURTEEN</span> of your own.</strong></p>
<p><em>Not to mention&#8230; have you ever eaten freshly prepared flour tortillas?  </em> You must experience them at least once your life, they are completely different and so much more delicious than the store bought version.</p>

<p>Wal-Mart sells five pounds of flour for $2.12.  It takes four cups to make sixteen 10&#8243; flour tortillas.  Five pounds of flour contains 18 cups of flour.  Your cost per cup is 12 cents, and four cups of flour comes to 48 cents. Four cups of flour makes 16 tortillas, so your cost per each tortilla is three cents.</p>
<p>If you invest in the 25 pound bag of flour from Wal-mart, currently $8.98 your cost per cup of flour is 10 cents per cup, and 40 cents for four cups. 40 cents for sixteen tortillas = 2.5 cents each.  Yes, 2.5 PENNIES as opposed to 35 cents each.</p>
<p>If you buy buy two packages of tortillas in a month, (16 tortillas) and twenty four packages (192) over the course of a year, you are looking to spend $66.96.</p>
<p><strong>If you made your own tortillas all year long, it would cost you $5.76.<br />
</strong></p>
<p>That is quite a savings&#8230; $67 vs. $6.  Even if you go all out and use <a rel="nofollow" target="_blank" href="http://www.outofdebtagain.com/product/com/B0047YX0J8/outofdebtagain-20/">King Arthur White Bread Flour</a> which costs $3.72 for five pounds at the writing of this post, you would spend only a nickel for each tortilla.</p>
<p>I know you&#8217;re thinking it must take a lot of time to make flour tortillas myself, or there must be equipment in which you must invest.   Actually no, unless it happens you only cook using your microwave it&#8217;s likely you have everything you need right now in your kitchen.</p>
<p>To make this easier you will need a rolling pin.</p>

<p>And it helps if you have a round griddle, I prefer cast iron.  But you can also bake tortillas using a regular skillet, or even on your barbecue grill!</p>

<p><strong>HOMEMADE FLOUR TORTILLAS</strong></p>
<ul>
<li>4 cups all-purpose or whole wheat flour</li>
<li>1 teaspoon salt</li>
<li>1/4 teaspoon baking soda</li>
<li>1+ cup hot (not boiling) water</li>
</ul>
<p>That&#8217;s it!</p>
<p><strong>MIXING THE DOUGH</strong></p>
<ol>
<li>Measure four cups of flour into a bowl.</li>
<li>Add the salt, baking soda, mix together.</li>
<li>Using hot water from the tap, start with one cup and pour slowly into the flour.</li>
<li>Mix with a fork until the dough is clumpy but moist.  You may need to add more water if you use whole wheat flour, or depending on how dry your flour is.  If you happen to grind your own flour (even more savings!) it will be more moist, as opposed to commercially ground, store bought flour.</li>
<li>Knead the dough until it is soft and pliable.</li>
<li>Take a handle of the dough and squish a golf ball sized ball of dough from between your thumb and index finger.</li>
<li>Place the balls of dough on a plate and cover with a moist cloth kitchen towel.</li>
<li>Allow to sit for 30 minutes.</li>
</ol>
<p>That&#8217;s it for putting the dough together.</p>
<p><strong>BAKING THE TORTILLAS</strong></p>
<ol>
<li>When 30 minutes is up, set your griddle on the stove and turn to medium-heat.  The griddle should be dry, not greased.</li>
<li>As the griddle is heating, begin rolling out your tortillas.</li>
<li>Flour the surface you are using first, place the first ball on the surface and use the rolling pin to flatten the ball, making an elongated oval shape. Turn the dough sideways and upside down and roll again with the rolling pin.  This will make the dough flatten into more of a circle. Continue to roll and turn until you have a nice thin circle of dough.</li>
</ol>
<p>You will know your griddle is hot enough when you get a few drops of water on your hand and sprinkle onto the griddle, the water will skitter in tiny balls across the hot surface.  If it only steams, heat it up some more &#8211; this is for cast iron griddles &#8211; and try the water skittering test again.</p>
<p>When the griddle is hot enough, place the tortilla on the griddle and allow to cook for a few seconds.  As the tortilla bakes it will begin to bubble.  Peek under the edge of the tortilla and see if it looks done, you should see mostly white but a few brown or black dots. Turn it over and allow it to cook a few more seconds. If you have a tortilla warmer you can use that to insert each tortilla once you are done. If not, just use another skillet with a lid and place each tortilla in there as each one finishes baking.</p>
